Sauce variety matters more than you think
A short sauce list means everyone at the table ends up eating the same thing. A long one lets each person find their spot, from mild and buttery to properly hot. Look for a range that covers:
- Mild to very hot classics, so heat-seekers and cautious eaters are both covered
- Sweet and tangy options like barbecue, honey mustard or teriyaki
- Garlic and parmesan styles for people who skip heat altogether
- Something local or unusual you won't find on every menu

Heat names aren't standardized, so "Hot" at one place may be "Medium" somewhere else. If you're unsure, start one step lower than you think and work up. Ordering a second, hotter batch is easier than suffering through the first one.
Look at the whole plate
Good wings come with the basics done right. Celery and bleu cheese still matter, especially with hotter sauces. At The Bar at the Patch, wings include celery and bleu cheese, with extra celery, bleu cheese or sauce available on the side.
Sizes and sharing
